  2. Shape each portion into a ball, then flatten into patties about 4 inches across and 1/2 inch thick.
  3. Cook the patties on a hot grill, under a broiler, or in a very hot skillet without additional fat.
  4. Cook for 2 to 5 minutes per side, depending on desired doneness.
  5. Transfer the cooked hamburgers to 4 warmed plates and keep warm.
  6. Heat 1 tablespoon of butter in a small skillet over medium heat.
  7. Crack one egg into the skillet and cook without turning until the white is firm but the yolk remains runny.
