Description

These satisfying "chicken" burgers are a clever vegetarian twist on a classic favorite, made primarily from firm tofu and packed with finely grated vegetables. The combination of cabbage, carrots, and nutritional yeast creates a savory, umami-rich flavor profile that mimics the texture and taste of poultry, while whole-wheat flour helps bind the patties together. With a hint of poultry seasoning and soy sauce, these burgers offer a comforting, home-style meal that is both nutritious and delicious. Perfect for weeknight dinners, they can be served on toasted buns with your favorite condiments or enjoyed as a lighter option with a side salad.

Directions

  1. Drain the firm tofu and wrap it in a clean kitchen towel or paper towels. Place a heavy object on top to press out excess moisture for at least 10 minutes while you prepare the other ingredients.
  2. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly oil it to prevent sticking.
  3. Heat the olive oil in a skillet over medium heat. Add the minced green onions and sauté briefly until fragrant, about 1 minute.
  4. Add the finely grated cabbage and carrots to the skillet. Sauté for 4 to 5 minutes, stirring occasionally, until the vegetables are softened. Remove from heat and set aside to cool slightly.
  5. Place the pressed tofu into a food processor or blender. Process until the tofu is smooth and creamy.
  6. Add the whole-wheat flour, nutritional yeast, soy sauce, baking powder, and poultry seasoning to the processed tofu. Blend until the mixture is smooth and well combined.
  7. Transfer the tofu mixture to a large bowl. Add the sautéed vegetable mixture. Gently stir or pulse in the food processor just enough to incorporate the vegetables without overmixing.
  8. Scoop about 1/3 cup of the mixture onto the prepared baking sheet for each patty. Flatten and shape each portion into a neat round, approximately 1/4 to 1/2 inch thick.
  9. Bake the patties in the preheated oven for 15 minutes. Carefully flip each patty over and bake for an additional 10 minutes, or until golden brown and firm to the touch.
