  1. Preheat oven to 275&# 194;°F (135ðC). Line two baking sheets with parchment paper or silicone baking mats.
  2. Ensure your mixing bowl and beaters are completely clean, grease-free, and dry. Add egg whites to the bowl.
  3. Beat egg whites on medium speed until soft peaks form, then increase speed to high until stiff, glossy peaks form.
  4. Add 1 tablespoon of the superfine sugar and beat until fully incorporated and the meringue is shiny.
  5. Gradually add the remaining sugar, one tablespoon at a time, beating well after each addition until the sugar is dissolved and the meringue is stiff and glossy.
  6. Spoon or pipe small mounds of meringue onto the prepared baking sheets, spacing them about 1 inch apart.
  7. Sprinkle each mound with a few pieces of chopped mixed candied fruit.
  8. Bake for 1 hour and 15 minutes, or until the outside is crisp and dry but the center is still slightly soft.
  9. Turn off the oven and leave the meringues inside with the door slightly ajar for 1 hour to dry out completely.
  10. Remove from the oven and let cool completely on the pans before gently peeling off the parchment paper.
