Ingredients

Directions

  1. Preheat oven to 350ðF (175ðC). Grease a 9-inch springform pan.
  2. In a bowl, mix crushed graham crackers, 1/3 cup sugar, and melted butter until combined.
  3. Press the cracker mixture firmly into the bottom and slightly up the sides of the prepared pan.
  4. Bake the crust for 10 minutes, then remove and let cool while preparing the filling.
  5. In a large bowl, beat cream cheese until smooth and creamy.
  6. Add sugar and beat until well incorporated and light.
  7. Beat in eggs one at a time, mixing just until combined after each addition.
  8. Stir in drained, crushed pineapple, sour cream, vanilla, and cornstarch until smooth.
  9. Pour the filling over the cooled crust and smooth the top.
  10. Place the springform pan in a larger roasting pan and fill the larger pan with hot water halfway up the sides of the springform pan.
  11. Bake for 50âÂÂ60 minutes, or until the edges are set but the center still jiggles slightly.
  12. Turn off the oven and crack the door open; let the cheesecake cool in the oven for 1 hour.
