Description

This lighter take on a classic American comfort food delivers deep, savory flavors without the heavy grease. A lean bottom round roast is browned and then slowly simmered with aromatic onions, garlic, and warming spices like cumin and coriander. The addition of green chili peppers and tomato paste creates a robust, tangy sauce that penetrates the meat, resulting in tender slices that fall apart at the touch. Ingredients

Directions

  1. Trim any external fat from the beef bottom round roast.
  2. Heat a deep, heavy pot with a lid over medium-high heat; add the roast to the dry pot.
  3. Brown the meat on all sides until a crust forms, using no added fat.
  4. Add the chopped onions and minced garlic to the pot with the meat.
  5. Cook, stirring occasionally, until the onions are soft, about 3-4 minutes.
  6. Stir in the coriander seed, ground cumin, tomato paste, green chili peppers, and black pepper to taste.
  7. Pour in 3/4 cup of water, scraping up any browned bits from the bottom of the pot.
  8. Bring the liquid to a boil.
  9. Reduce heat to low, cover the pot, and simmer for 2.5 to 3 hours, or until the meat is fork-tender.
  10. Remove the roast from the pot and let it rest for 10 minutes before slicing.
  11. Slice the beef thinly against the grain.
  12. Serve the sliced roast with the remaining sauce from the pot, alongside noodles and steamed broccoli.
