Ingredients

Directions

  1. Preheat your oven to 350ðF (175ðC).
  2. Place the drained tofu into a blender container and blend until completely smooth and creamy.
  3. In a large saucepan, heat the vegetable oil over medium heat.
  4. Add the chopped onion and minced garlic to the pan, cooking until the onion is soft and translucent, about 5 minutes.
  5. Stir in the undrained canned tomatoes and 1 teaspoon of dried crushed oregano.
  6. Bring the tomato mixture to a boil, then reduce heat and simmer uncovered for 3 minutes to concentrate the flavors.

  8. Divide the mixture evenly among four greased individual casserole dishes or combine all in one greased 1 1/2-quart baking dish.
  9. Bake uncovered in the preheated oven for 30 minutes, or until the dish is heated through and bubbly.
  10. Remove from oven and sprinkle generously with toasted sesame seeds before serving.

Note

**Ingredient Notes:** Ensure the brown rice is fully cooked before adding it to the mixture. If using frozen spinach, thaw it completely and squeeze out all excess water to prevent the dish from becoming watery.

**Storage & Reheating:** Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through. This dish also freezes well for up to 2 months; thaw overnight in the fridge before reheating.

**Variations:** For extra richness, stir in a splash of nutritional yeast or a tablespoon of vegan butter before baking. You can also add other roasted vegetables like bell peppers or zucchini for added texture and flavor.
