Description

This Heath Bar Cake is the ultimate comfort dessert, combining the deep flavor of chocolate chips with the salty-sweet crunch of Heath toffee bars. The batter is moist and tender, thanks to buttermilk and butter, while the streusel topping provides a delightful textural contrast with its coarse, cornmeal-like consistency. Loaded with chopped nuts and broken toffee pieces, every bite offers a satisfying mix of chewy chocolate and crisp caramel crunch. Its a nostalgic treat that feels indulgent yet simple to prepare, making it perfect for potlucks, holiday gatherings, or a special weekend baking project. Serve it warm or at room temperature for the best experience.

Ingredients

Directions

  1. Preheat your oven to 350F (175C).
  2. In a large mixing bowl, combine the flour, brown sugar, and granulated sugar.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse cornmeal.
  4. Remove about half of this crumb mixture and set it aside in a separate bowl for the topping.
  5. Coarsely chop 7 Heath bars and add them to the remaining flour mixture in the large bowl.
  6. Stir in 1 cup of the chopped nuts and the chocolate chips into the batter base.
  7. In a small bowl, stir the baking soda into the buttermilk and let it sit for a minute to activate.
  8. Pour the buttermilk mixture into the flour mixture and stir until just combined.
  9. Add the egg and vanilla extract, stirring vigorously until a smooth, thick batter forms.
  10. Grease and flour a 9x13 inch baking pan, then spread the batter evenly into the pan.
  11. Coarsely chop the remaining 2 Heath bars.
  12. Add the chopped Heath bars and the remaining chopped nuts to the reserved crumb topping mixture.
  13. Sprinkle this topping evenly over the batter in the pan.
  14. Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  15. Allow the cake to cool completely in the pan before cutting and serving.
