Ingredients

Directions

  1. Preheat oven to 325°F (165°C).
  2. In a small bowl, combine 2 tablespoons rubbed sage, 2 teaspoons salt, 2 teaspoons pepper, 2 teaspoons curry powder, 2 teaspoons garlic powder, 2 teaspoons celery seed, 2 teaspoons parsley flakes, 1 teaspoon paprika, 1/2 teaspoon ground mustard, and 1/4 teaspoon allspice. Mix well.
  3. Pat the turkey dry with paper towels. Rub half of the seasoning mixture inside the cavity of the turkey.
  4. Rub the remaining seasoning mixture evenly over the entire surface of the turkey skin.
  5. Tie the drumsticks together with kitchen twine and tuck the wing tips under the body. Place the turkey breast-side up in a roasting pan.
  6. Roast in the preheated oven for approximately 3 to 3.5 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 185°F (85°C).
  7. Remove from oven and let rest for 20 minutes before carving.

Note

Ensure the turkey is completely thawed before roasting. Allow about 24 hours in the refrigerator for every 4-5 pounds of turkey.

For extra crispy skin, consider air-drying the turkey in the refrigerator uncovered for 24 hours before roasting.

If you prefer a darker crust, increase the oven temperature to 375°F (190°C) for the last 30 minutes of cooking, watching carefully to prevent burning.

Leftover turkey can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months.

Curry powder adds a unique warmth to this rub; if you prefer a more traditional flavor profile, substitute with additional sage or thyme.
