Directions
-
In a small bowl, whisk together tomato juice, oil, dried basil, oregano, pepper, and minced garlic to create the marinade.
-
Trim excess fat from the steak and cut it into 4 equal portions.
-
Place the steak portions in a plastic bag set inside a deep bowl. Pour the marinade over the steak, seal the bag, and turn to coat the meat evenly.
-
Refrigerate the steak in the marinade for at least 4 hours, or preferably overnight, turning occasionally.
-
Preheat grill to medium heat. Remove steak from marinade, draining well, and reserve the marinade.
-
Place thinly sliced onion rings on an 18-inch square of heavy-duty aluminum foil. Turn up the edges slightly to form a packet.
-
Drizzle 1/2 cup of the reserved marinade over the onions in the foil packet. Fold the foil tightly to seal, creating a secure packet.
-
Place the sealed onion packet and the steak directly on the grill grate over medium coals or heat.
-
Grill for 10 minutes, then turn both the steak and the onion packet.
-
Brush the steak with some of the remaining reserved marinade. Continue grilling the steak for 8-10 minutes more for medium doneness, or until desired internal temperature is reached.
-
Grill the onion packet for an additional 8 minutes, or until the onions are tender.
-
Carefully unwrap the onion packet and transfer the onions to a serving plate.
-
Arrange the grilled steak atop the onions. Spoon any remaining sauce from the onion packet over the meat and serve immediately.

Note
For food safety, do not use the marinade that has touched raw meat as a sauce unless you boil it first. Alternatively, reserve 1/2 cup of the marinade before adding it to the steak, as done in the directions, for basting and serving.
Top round is a lean cut, so avoid overcooking to keep it tender. Slicing the steak against the grain after cooking can also improve tenderness.
If you prefer a smokier flavor, add a few wood chips to your charcoal or gas grill.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of water or broth to prevent drying out.
