Description

Hobo Bread is a nostalgic, comforting quick bread that delivers a rich, sweet flavor with a tender crumb. This recipe uses boiling water to rehydrate plump raisins, infusing the batter with natural sweetness and moisture. The addition of nutmeg and vanilla adds warm, aromatic depth, while chopped nuts provide a satisfying crunch. Its a versatile treat perfect for breakfast, brunch, or as an afternoon snack with coffee. Despite its humble originsoften baked in tin cans during the Depression erathis bread feels indulgent and special. It pairs beautifully with a slice of butter or a cup of tea. Simple ingredients and straightforward steps make it an easy winner for any home baker looking for a heartfelt, homemade dessert or side bread.

Ingredients

Directions

  1. Preheat oven to 350F (175C). Grease and flour two 8.5 x 3.5 inch loaf pans, or prepare clean, empty tuna cans if using the traditional method.
  2. In a small bowl, combine 1/4 cup sugar and 1/4 cup of the chopped nuts to make the topping. Set aside.
  3. In a heatproof bowl, combine the raisins and boiling water. Let stand for 10 minutes to plump the raisins.
  4. Allow the raisin mixture to cool until lukewarm. Stir in the baking soda until dissolved.
  5. Add the remaining sugar, vegetable oil, beaten eggs, vanilla, nutmeg, flour, and remaining chopped nuts to the raisin mixture. Mix well until just combined.
  6. Pour the batter evenly into the prepared loaf pans or tuna cans (filling cans only halfway if using).
  7. Sprinkle the reserved sugar and nut topping over the batter.
  8. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in pans for 10 minutes before turning out onto a wire rack to cool completely.
