Ingredients

Directions

  1. Combine sugar and water in a small saucepan.
  2. Cook over medium heat, stirring occasionally, until the mixture comes to a boil.
  3. Reduce heat to low and simmer, stirring occasionally, until the sugar has completely dissolved.
  4. Remove from heat and allow the simple syrup to cool to room temperature.
  5. Measure 1 cup of the cooled syrup.
  6. Combine the 1 cup of syrup with vodka, cocoa powder, and the split vanilla bean in a clean 2-quart glass container.
  7. Cover tightly and keep in a cool, dark place for 14 days, shaking the container thoroughly every 2 days.
  8. Strain the liqueur through dampened coffee filter paper into a clean glass container.
  9. Change the filter paper mid-process if necessary, or let it drip overnight, as cocoa residue is very thick.
  10. Repeat the straining process if any residue remains.
  11. Remove the vanilla bean.
  12. Cover tightly and let the liqueur age in a cool, dark place for at least 1 month.
