Baked until bubbly and golden, these rolls are a satisfying main course perfect for weeknight dinners or family gatherings. They are rich in flavor yet simple to prepare using pantry staples and fresh ingredients you likely already have on hand.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. In a large skillet over medium-high heat, thoroughly brown the ground beef. Drain any excess fat from the skillet.
  3. Add the chopped mushrooms, finely chopped onion, minced carrot, and minced garlic to the skillet. Saut until the vegetables are tender.
  4. Pour in the dry red wine, nutmeg, cayenne pepper, salt, and pepper. Cook until the wine is almost completely evaporated.
  5. Remove the skillet from heat and allow the meat mixture to cool for 10 to 15 minutes.
  6. In a medium bowl, combine the cooled meat mixture, mozzarella cheese, beaten egg, and 1 tablespoon of the Parmesan cheese. Mix thoroughly.
  7. Spread half of the spaghetti sauce evenly into the bottom of a 13x9-inch baking dish.
  8. Lay out the cooked lasagna noodles. Evenly spread about 1/3 cup of the meat filling over the length of each noodle.
  9. Carefully roll up each noodle. Place the rolls seam-side down in the baking dish. Repeat with remaining noodles.
  10. Cover the dish and bake for 40 minutes.
  11. Uncover the dish and sprinkle the remaining 3 tablespoons of Parmesan cheese over the rolls.
  12. Bake uncovered for an additional 5 minutes, or until the cheese is bubbly and lightly golden.

Note

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.

Variation: For a lighter version, substitute ground turkey or chicken for the beef. You can also use a low-sodium spaghetti sauce to reduce sodium content.

Tip: Ensure the meat mixture cools sufficiently before adding the egg and cheese; if it is too hot, it may melt the cheese prematurely and make the rolls difficult to handle.

Ingredient Note: Use no-boil lasagna noodles if you prefer to skip the boiling step, but check the package instructions for adjustments to baking time or liquid content.
