Directions
-
Preheat oven to 350&# 194;°F (177ðC). Spread sliced almonds on a baking sheet and toast for 10 minutes until fragrant and lightly golden. Let cool completely.
-
Place the outer ring of an 8-inch springform pan on a flat serving plate and put it in the freezer to chill.
-
Whip 1/2 cup of heavy cream until stiff peaks form. Refrigerate while preparing the custard.
-
Split a vanilla bean lengthwise and scrape out the seeds.
-
In the top of a double boiler or a heatproof bowl that fits snugly over a saucepan, whisk together 1 egg, 1 egg yolk, 3 tablespoons of honey, and the scraped vanilla bean seeds.
-
Place the bowl over a saucepan of simmering water (double boiler method). Whisk vigorously and constantly until the mixture is lightly thickened and coats the back of a spoon, about 5 to 7 minutes. Do not let it boil.
-
Remove from heat and continue beating or whisking vigorously until the custard is thick and completely cooled to room temperature.
-
Gently fold the cooled toasted almonds and the reserved whipped cream into the custard mixture until just combined.
-
Pour the mixture into the chilled springform pan ring. Smooth the top with a spatula.
-
Dip a finger in cold water and run it around the inner rim of the mixture to form a clean edge.
-
Return the parfait to the freezer for at least 2 hours, or until firm enough to unmold.

Note
The vanilla bean seeds add beautiful speckling and intense flavor. If you do not have a fresh vanilla bean, you can substitute 1/2 teaspoon of high-quality vanilla extract, but add it after cooling the custard to preserve the aroma.
Toasting the almonds is crucial for developing their nutty flavor and providing a textural contrast to the creamy parfait. Ensure they are completely cool before folding them in to prevent melting the whipped cream structure.
For best results, serve the parfait immediately after unmolding from the freezer. If not serving immediately, transfer to the refrigerator for up to 24 hours, but note that the texture may become slightly firmer.
To unmold, briefly warm the outside of the springform ring with a hot towel or hair dryer to loosen it, then gently lift the ring away.
