Description

This elegant yet simple dish features tender chicken breasts gently poached in a fragrant broth infused with rosemary, bay leaf, and aromatic vegetables. The cooking method ensures the meat remains juicy and flavorful without drying out. After chilling and reheating, the breasts are brushed with pure honey and broiled to create a beautiful, sticky glaze that caramelizes perfectly. Finished with toasted sliced almonds, this recipe offers a delightful contrast of textures: soft, succulent chicken against the crunch of nuts.

Directions

  1. Arrange sliced almonds in a single layer in a shallow baking pan.
  2. Broil almonds for 1 minute or until golden brown, watching closely to prevent burning and stirring if necessary.
  3. Transfer toasted almonds to a container, cover, and set aside.
  4. In a 6-quart kettle, combine onion, celery, carrot, parsley, salt, pepper, rosemary, bay leaf, undiluted condensed chicken broth, and water.
  5. Bring the mixture to a boil.
  6. Add the chicken breasts and cover the kettle.
  7. Simmer for 30 minutes or until the chicken is tender.
  8. Remove from heat and place the kettle immediately in the refrigerator to chill overnight.
  9. The next day, place the kettle with the chicken mixture over low heat.
  10. Cook until the chicken is heated through, about 10 minutes.
  11. Remove chicken from the broth and place skin side up in a large, shallow baking pan.
  12. Spoon 1 cup of the hot chicken broth into the baking pan with the chicken.
  13. Strain the remaining broth to discard the vegetables; save the strained broth for other uses.
  14. Using a pastry brush, brush the chicken with half of the honey.
  15. Broil the chicken, positioned 4 inches from the heat source, for 2 minutes.
  16. Brush the chicken again with the remaining honey.
  17. Broil until the chicken is glazed and golden brown.
  18. Remove chicken from the broiler and arrange the honey-glazed breasts on a heated platter.
  19. Sprinkle with the toasted sliced almonds.
  20. Serve immediately.
