Description

This Honey Peanut Butter Fudge is a decadent treat that combines the classic comfort of peanut butter with the floral sweetness of honey. Unlike traditional fudge that requires precise temperature monitoring, this version uses a simple boiled sugar syrup poured over whipped egg whites to create a light, airy, and chewy texture. The addition of chopped nuts provides a delightful crunch, while vanilla extract adds a subtle aromatic depth. Perfect for holiday gift boxes, potluck desserts, or simply satisfying a sweet tooth at home, this fudge is easy to make and impossible to resist. The natural sweetness of the honey balances the saltiness of the peanut butter, creating a harmonious flavor profile that appeals to both adults and children.

Ingredients

Directions

  1. In a small saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until sugar dissolves, then cook without stirring until the mixture reaches the soft-ball stage (234F (112C) (114C) - 238F) on a candy thermometer.
  2. While the sugar syrup is cooking, beat the egg whites in a large bowl using an electric mixer until they form stiff, glossy peaks.
  3. Once the sugar syrup reaches temperature, remove from heat and slowly pour it in a thin, steady stream into the beaten egg whites, beating constantly with the mixer on high speed.
  4. Continue beating the mixture vigorously until it cools slightly and becomes thick and stiff enough to hold its shape when dropped from a spoon.
  5. In the same saucepan, combine the remaining sugar, honey, peanut butter, and the remaining water. Bring to a boil and cook until it reaches the soft-ball stage (234F (112C) (114C) - 238F).
  6. Slowly pour the hot honey-peanut butter mixture into the egg white mixture, beating constantly until fully incorporated and the mixture thickens further.
  7. Beat until the mixture is very thick and glossy, ensuring it holds its shape firmly when dropped from a teaspoon.
  8. Fold in the chopped nuts and vanilla extract until evenly distributed.
  9. Drop the fudge by teaspoonfuls onto a sheet of waxed paper or parchment paper. Allow to cool completely at room temperature until firm.

Note

Safety Warning: This recipe involves boiling sugar syrups to very high temperatures (234F-238F). Be extremely careful to avoid splashes, as sugar burns are severe. Ensure the candy thermometer is accurate.

Storage: Store the finished fudge in an airtight container at room temperature for up to 2 weeks. Do not refrigerate, as cold temperatures can cause the fudge to become hard and dry out.

Variation: You can substitute the chopped nuts with chocolate chips or dried fruit for a different flavor profile, though traditional peanuts or walnuts work best with the peanut butter.

Tip: For easier handling, you can grease your hands lightly with oil when dropping the fudge spoonfuls, especially if the mixture is still warm and sticky.
