Description

This vibrant green relish offers a sharp, tangy contrast that cuts through the richness of hot dogs and grilled meats. Made with crisp green tomatoes, cabbage, and a colorful mix of sweet peppers, it delivers a satisfying crunch and bright flavor profile. The combination of cider vinegar, sugar, and warm spices like celery and mustard seed creates a balanced sweet-and-sour taste. It is an excellent addition to summer barbecues, picnics, or as a zesty topping for burgers. Unlike store-bought versions, this homemade relish allows you to control the texture and spice level, ensuring a fresh, garden-to-table experience every time.

Ingredients

Directions

  1. Combine finely chopped green tomatoes, cabbage, green peppers, red peppers, and onion in a large bowl.
  2. Sprinkle pickling salt over the vegetables, stir well to distribute evenly, and refrigerate overnight.
  3. In a large pot, combine sugar, mustard seed, celery seed, and ground turmeric.
  4. Stir in cider vinegar and 1/2 cup water.
  5. Cook over medium heat, stirring constantly until the mixture comes to a boil and the sugar is completely dissolved.
  6. Drain the marinated vegetables in a colander and rinse thoroughly under cold running water.
  7. Add the rinsed vegetables to the hot vinegar mixture in the pot.
  8. Cook and stir until the mixture returns to a boil, then remove from heat.
  9. Ladle the hot relish into sterilized half-pint or pint jars, leaving 1/2-inch headspace.
  10. Wipe jar rims clean and adjust lids.
  11. Process in a boiling water canner for 5 minutes for half-pints or 10 minutes for pints.

Note

The overnight refrigeration step allows the salt to draw out moisture from the vegetables, enhancing the crunch and flavor. Do not skip rinsing, as it removes excess salt and prevents the relish from being overly salty.

Ensure jars are properly sterilized before filling to prevent spoilage. Follow your specific water bath canner manufacturer's instructions for processing times based on your altitude.

For immediate use without canning, you can skip the processing step and store the cooled relish in the refrigerator for up to 2 weeks.

Turmeric is added primarily for color; it does not significantly alter the flavor but gives the relish a traditional golden-green hue.
