Description

This hot-smoked trout recipe delivers tender, flaky fish with a rich, savory depth from a simple dry cure and aromatic wood smoke. The trout is seasoned with kosher salt and sugar, then cured overnight to enhance moisture and flavor. Smoked over low heat using alder or fruitwood chips, the fish develops a beautiful pink hue and a delicate, smoky crust while remaining moist inside. Perfect for weekend brunches, casual gatherings, or a sophisticated dinner party, this dish pairs wonderfully with roasted vegetables, salads, or crusty bread. The process is straightforward but rewarding, offering a homemade touch that elevates ordinary trout into a gourmet experience. Serve hot off the grill or chilled as a flavorful appetizer.

Ingredients

Directions

  1. Fillet the trout, leaving the skin on. If desired, use tweezers or clean needle-nose pliers to remove the pin bones running down the center of the fillets.
  2. Place the fillets skin-side down in a glass or stainless steel baking pan or deep dish.
  3. Combine the kosher salt and sugar in a small bowl.
  4. Sprinkle a generous layer of the salt-sugar mixture over the fish, applying more heavily to the thickest parts and less to the tail and edges.
  5. Cover the pan and refrigerate for 8 hours or overnight to cure the fish.
  6. Drain off any juices that have collected in the pan.
  7. Add cold water to cover the fish, let stand for 15 minutes, then drain. Repeat this process once more.
  8. Drain well and pat the fillets dry with paper towels.
  9. Lay the fillets on a wire rack in a cool, breezy place for 15 minutes to allow the surface to dry further.
  10. Meanwhile, soak 1/2 cup of the smoking chips in water.
  11. Build a small charcoal fire with 10 to 12 briquettes at one edge of a covered grill. Let it burn down until covered with gray ash.
  12. Cover the grill and adjust the top and bottom vents to maintain a temperature of approximately 200&# 194;°F (93ðC).
  13. Drain the soaked chips and add them to the coals. Place the grill grate with one handle nearest the fire to facilitate adding more chips later.
  14. Lay the fillets on the grill grate on the side opposite the fire, positioning the thickest parts nearest the heat source.
  15. Cover and cook until the fish is opaque throughout, which takes about 30 to 40 minutes.
  16. Every 15 minutes, add a handful of dry smoking chips to the fire to maintain smoke and heat.
  17. Remove from grill and serve hot or cold.
