Description

This Hot and Sour Soup offers a delightful balance of tangy lemon, spicy chili-garlic heat, and savory oyster sauce. The broth is enriched with a quick shrimp stock, providing a deep seafood flavor without hours of simmering. Crisp chayote and earthy mushrooms add wonderful texture, contrasting with the tender, pink shrimp. It is a perfect weeknight dinner that feels both comforting and exotic.

Ingredients

Directions

  1. Peel the chayote and cut it into 1/8 to 1/4-inch dice.
  2. Peel the shrimp, keeping the shells.
  3. Combine the shrimp shells, lemon rind, lemongrass tops (if using), allspice berries, sliced garlic, 2 tablespoons of oyster sauce, and water in a large pot.
  4. Bring to a simmer, cover, and cook for 15-20 minutes to create a flavorful broth.
  5. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.
  6. Return the broth to a simmer and add the diced chayote. Cook for 5-6 minutes until the chayote is tender-crisp.
  7. Devein the shrimp and halve them lengthwise. Add the shrimp, mushrooms, and 1 teaspoon of chili-garlic paste to the soup.
  8. Bring the soup to a boil and stir until the shrimp turn pink and opaque.
  9. Remove from heat. Slowly stir in the lemon juice and remaining oyster sauce to taste.
  10. Stir in fresh cilantro leaves and serve immediately.

Note

Cilantro leaves to taste should be added at the very end to preserve their fresh flavor.

For a clearer broth, strain the shrimp stock carefully. If you prefer a stronger seafood flavor, you can add a little more oyster sauce or a dash of fish sauce.

If you cannot find chayote, zucchini or green beans can be substituted for a similar texture.

Adjust the heat level by adding more or less chili-garlic paste according to your preference.
