  1. In a double boiler, heat the heavy cream and milk until hot but not boiling.
  2. In a separate bowl, combine the sugar, flour, and salt.
  3. Add the sugar mixture to the beaten egg yolks and beat until well mixed.

  5. Pour the tempered egg mixture back into the double boiler with the remaining cream mixture.

  7. Remove from heat and stir in the vanilla extract.
  8. Cover the surface of the custard directly with waxed paper to prevent a skin from forming and refrigerate overnight.
  9. Preheat the oven to 350F (175C).
  10. Butter a 1 1/2-quart mold or 4 to 6 custard cups and sprinkle lightly with granulated sugar.
  11. In a large clean bowl, beat 4 egg whites until foamy.
  12. Add 1/8 teaspoon salt and 1/4 teaspoon cream of tartar, then continue beating until soft peaks form.
  13. Gradually add 1 cup of granulated sugar, beating well after each addition, until stiff peaks form.
  14. Gently stir in 1 teaspoon of vanilla extract.
  15. Transfer the meringue mixture into the prepared mold or custard cups.
  16. Place the mold or cups in a larger pan filled with hot water.
  17. Bake the large mold for 30 minutes or the individual custard cups for 15 minutes.
  18. Immediately unmold the meringues onto a serving plate or individual dishes; they will shrink slightly.
  19. Refrigerate the meringues until ready to serve.
  20. In a heavy skillet, spread 1/4 cup granulated sugar in a thin layer.
  21. Heat slowly over low heat until the sugar melts and turns golden brown.
  22. Carefully stir in 3 tablespoons of hot water, continuing to heat until the syrup thickens slightly and all lumps dissolve.
  23. Pour the chilled custard sauce around the meringues.
  24. Drizzle the warm caramel syrup over the top and garnish with strawberries if desired.

The custard sauce can be made up to two days in advance. Ensure the waxed paper touches the surface of the custard to prevent a skin from forming.

If the caramel syrup becomes too thick to pour, reheat it gently over a double boiler or add a few more drops of hot water.
