In The Spirit Seafood Strata
Description
This In The Spirit Seafood Strata is a comforting, make-ahead dish that combines the rich flavor of lobster bisque with sweet crabmeat and crisp water chestnuts. The base of crushed oyster crackers soaks up a custard of eggs and milk, creating a texture similar to a savory bread pudding. Its an elegant yet simple meal perfect for brunch, holiday gatherings, or a relaxed weekend dinner. The addition of fresh green onions and lemon pepper adds a bright contrast to the rich seafood base. Since it requires chilling time, its ideal for meal prep, allowing you to assemble it the night before and simply pop it in the oven when youre ready to serve.Ingredients
Directions
-
Preheat oven to 350F (175C). Lightly grease a 13x9-inch baking dish.
-
Place 2 1/2 cups of the oyster crackers in a large zip-top bag and crush them coarsely using a rolling pin or heavy utensil.
-
Sprinkle the crushed crackers evenly over the bottom of the prepared baking dish.
-
In a medium bowl, combine the chopped green onion whites, water chestnuts, thawed peas, and drained crabmeat.
-
Spread the seafood and vegetable mixture evenly over the layer of crushed crackers in the baking dish.
-
Top with the remaining 1/2 cup of whole oyster crackers.
-
In a large mixing bowl, whisk together the eggs, milk, lemon juice, lemon pepper seasoning, and the two envelopes of dry lobster bisque soup mix until smooth.
-
Pour the egg mixture evenly over the layers in the baking dish. Press down gently to ensure the crackers are submerged.
-
Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to absorb the liquid.
-
Remove from refrigerator and let stand at room temperature for 10 minutes while the oven finishes preheating.
-
Bake uncovered for 30 to 35 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
-
Let cool for 5 minutes before slicing into squares. Garnish with cherry tomatoes and reserved green onion tops if desired.
