Description

This unconventional Indian Chicken Curry Coca-Cola offers a surprising twist on traditional curry by using Coca-Cola to create a rich, sweet-and-savory sauce. The dish features tender chicken pieces simmered with aromatic curry powder, onions, and tart apples, resulting in a complex flavor profile. The addition of raisins and a hint of coffee adds depth, while the sauce thickens into a creamy consistency perfect for coating rice. Ingredients

Directions

  1. Rinse the chicken pieces thoroughly under cold water.
  2. In a large pot of boiling salted water, add the chicken and a few celery tops.
  3. Cover the pot and simmer the chicken for about 1 hour, or until it is fork-tender.
  4. Drain the chicken and strain the broth; reserve the broth for later use.
  5. Bone the cooked chicken and cut it into 1/2-inch pieces, measuring out about 2-1/2 cups.
  6. In a skillet, melt the butter or margarine over medium heat.
  7. Add the diced apple, thinly sliced onion, and curry powder to the skillet and sauté for 5 minutes, blending well.
  8. Stir in the raisins, 1 cup of the reserved chicken broth, and the Coca-Cola.
  9. In a separate bowl, mix the flour with the coffee cream or evaporated milk, stirring until smooth.
  10. Pour the flour mixture into the skillet along with salt and white pepper.
  11. Stir constantly and cook over low heat until the sauce is thick and creamy.
  12. Taste the sauce and adjust seasoning if necessary.
  13. Add the chopped chicken to the sauce and stir to combine.
  14. Transfer the mixture to a covered container and refrigerate overnight to chill.
  15. To serve, reheat the curry in the top of a double boiler over hot water until warm.
  16. Serve the hot curry over cooked rice, accompanied by your choice of condiments.
