Indian Pudding
Description
Indian Pudding is a classic American dessert with New England roots, despite its name. This rich, custard-like treat combines stone-ground cornmeal with milk, suet (or butter), molasses, and warm spices like ginger, cinnamon, and nutmeg. The result is a dense, fudgy texture with a complex, earthy sweetness that is both comforting and indulgent. It requires patience, as the batter must simmer before baking to ensure the cornmeal cooks thoroughly. Best served warm with a dollop of heavy cream or a scoop of vanilla ice cream, this dish is perfect for cold winter evenings or holiday gatherings. It offers a unique alternative to standard cakes or pies, delivering a hearty, home-style flavor profile that feels like a warm hug in a bowl.Ingredients
Directions
-
Finely chop the suet, removing all skin and connective tissue.
-
In a medium saucepan, combine the milk, cold water, and chopped suet. Bring to a boil over medium heat.
-
In a small bowl, wet the cornmeal with a little cold water to prevent lumps, then stir it into the boiling milk mixture along with the salt.
-
Reduce heat to medium-low and simmer, stirring constantly, for 15 minutes until the mixture thickens.
-
Remove the saucepan from the heat and let it cool slightly. Stir in 1/2 cup of cold milk to lower the temperature further.
-
Stir in the brown sugar, molasses, baking soda, ginger, cinnamon, and nutmeg.
-
In a separate bowl, beat the egg yolks well, then stir them into the cooled pudding mixture.
-
In a clean bowl, beat the egg whites until stiff peaks form, then gently fold them into the pudding batter.
-
Preheat oven to 350F (175C). Butter a 2-quart baking dish thoroughly.
-
Pour the batter into the prepared dish and bake immediately for 1 hour to 1 hour 15 minutes.
-
The pudding is done when the edges are set but the center still has a slight jiggle or whey.
-
Let cool for 15 minutes before serving warm with cream.
