  1. Remove stems and seeds from the fresh red chilies.
  2. Chop 2 medium onions and peel and chop 4 garlic cloves.
  3. Peel and chop 1 inch of fresh galangal (or ginger).
  4. In a food processor or blender, combine the chilies, chopped onions, garlic, 1 teaspoon shrimp paste, 5 candlenuts (or macadamia nuts/cashews), 1 teaspoon tamarind concentrate, and the chopped galangal.
  5. Puree the mixture until it forms a fine, smooth paste.
  6. Heat 3 tablespoons of vegetable oil in a skillet over medium heat.
  7. Add the pureed paste to the skillet and saute, stirring frequently, until aromatic and the raw smell disappears, about 3 to 4 minutes.
  8. Stir in 1 cup thick coconut milk, 1 teaspoon salt, 1 teaspoon brown sugar, and 2 crushed dried kaffir lime leaves.
  9. Reduce heat and simmer the mixture for about 15 minutes, stirring occasionally, until it thickens to your desired consistency.
