  1. Separate the eggs, placing yolks in a large bowl and whites in a separate clean bowl.
  2. In the bowl with yolks, beat the egg yolks and sugar together until light and creamy.
  3. Heat the coffee until hot but not boiling. Add the powdered gelatine and stir until completely dissolved.
  4. Slowly pour the hot coffee mixture into the egg yolk and sugar mixture, beating constantly.
  5. Place the bowl over a pot of simmering water (double boiler). Continue beating until the mixture thickens slightly.
  6. Remove from heat. Place the bowl over a bowl of cracked ice and continue stirring until the mixture begins to thicken and cool.
  7. Whip the 10 fl oz of whipping cream until stiff peaks form. Fold the whipped cream into the coffee mixture.
  8. Stir in the Irish whiskey.
  9. Beat the egg whites until stiff and glossy. Gently fold the beaten egg whites into the coffee mixture.
  10. Prepare a soufflé dish by tying a double thickness of parchment paper around it, extending 3 inches above the rim.
  11. Oil a small jam jar or bottle. Press it down into the center of the prepared soufflé dish to create a well.
  12. Pour the pudding mixture into the dish around the jar.
  13. Refrigerate until completely set, approximately 4 hours or overnight.
  14. To unmold, run a knife dipped in hot water around the edge to loosen the paper collar. Remove the paper.
  15. Carefully remove the jar from the center.
  16. Whip 1 cup of heavy cream with 1 tablespoon granulated sugar until stiff. Fill the center hole with this sweetened cream.
  17. Press crushed walnuts onto the exposed sides of the pudding using your hand. Serve immediately.
