  1. In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt, and undissolved yeast.
  2. Combine potato water and margarine in a saucepan.
  3. Heat over low heat until the liquid is warm; the margarine does not need to melt completely.
  4. Gradually add the warm liquid mixture to the dry ingredients.
  5. Beat for 2 minutes at medium speed with an electric mixer, scraping the bowl occasionally.
  6. Add the eggs, mashed potatoes, and 1/2 cup flour, or enough flour to make a thick batter.
  7. Stir in the raisins and enough additional flour to make a soft dough.
  8. Turn the dough out onto a floured board.
  9. Knead until smooth and elastic, about 10 minutes.
  10. Place the dough in a greased bowl, turning it once to grease the top.
  11. Cover and let rise until doubled in bulk.
  12. Punch the dough down.
  13. Turn out onto a lightly floured board.
  14. Divide the dough into 4 equal pieces.
  15. Shape each piece into a slender loaf, about 8 1/2 inches long.
  16. Put 2 loaves, side by side, in each of 2 greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans.
  17. Cover and let rise in a warm place, free from drafts, until doubled in bulk.
  18. Bake in a preheated 375 F (191&# 194;°C) oven for 35 minutes, or until done.
  19. Remove from pans and cool on wire racks.
