Description

This elegant Italian Cheese Terrine is a showstopping appetizer or light main that combines creamy cream cheese, sharp Parmesan, and vibrant pesto with layers of Muenster cheese and a tangy basil-tomato sauce. The result is a rich, savory sliceable loaf with beautiful marbled layers and a smooth, luxurious texture. It&# 226;ÂÂs perfect for entertaining, holiday gatherings, or as a sophisticated addition to a cheese board. Since it needs time to chill and set, itâÂÂs ideal for make-ahead meals, allowing you to prepare it a day in advance and focus on other tasks when guests arrive. Ingredients

Directions

  1. Beat the cream cheese and butter in a bowl with an electric mixer on medium speed until smooth and creamy.
  2. Add the Parmesan cheese and pesto to the cream cheese mixture; beat until fully combined and smooth. Set aside.
  3. Line a 3-cup bowl or terrine mold with plastic wrap, ensuring there is enough excess wrap hanging over the edges to cover the top later.
  4. Cut 5 slices of Muenster cheese diagonally in half to create triangles.
  5. Arrange the cheese triangles in the bottom of the lined bowl in a pinwheel fashion, slightly overlapping them to form the base layer.
  6. Spread half of the cream cheese mixture evenly over the cheese layer.
  7. Spread half of the Basil-Tomato Sauce over the cream cheese layer.
  8. Cut 2 slices of Muenster cheese in half crosswise to create rectangles.
  9. Arrange the cheese rectangles over the tomato sauce layer.
  10. Repeat the layering process with the remaining cream cheese mixture, Basil-Tomato Sauce, and 2 slices of Muenster cheese cut into triangles.
  11. Fold the excess plastic wrap over the top of the terrine to seal it securely.
  12. Place a heavy object, such as a small cast-iron skillet or a plate with weights, on top of the terrine to compact the layers.
  13. Refrigerate the terrine for at least 8 hours, or up to 3 days, to allow it to set.
  14. To serve, invert the terrine onto a cheese board or serving platter.
  15. Peel off the plastic wrap carefully.
  16. Garnish with fresh herb sprigs or shredded mozzarella if desired, and serve with crackers or baguette slices.

Note

This terrine tastes best when made a day in advance to allow the flavors to meld.

If you don't have Basil-Tomato Sauce, you can substitute with a simple mixture of marinara sauce and fresh chopped basil.

For a variation, try using Gouda or Havarti instead of Muenster cheese.

Ensure all cheeses are at room temperature before assembling for easier spreading and layering.

Store any leftovers tightly wrapped in the refrigerator for up to 3 days.
