Description

These Italian Marinated Mushrooms are a vibrant and refreshing cold appetizer that lets the natural earthiness of fresh mushrooms shine through a bright dressing. Tossed in a simple emulsion of extra virgin olive oil, zesty lemon juice, and finely minced garlic, they are infused with fresh parsley and green onions for a burst of herbal aroma. The flavors meld beautifully as they chill, making this dish ideal for parties, potlucks, or as a light starter before a heavy main course. Simple to prepare with pantry staples, these mushrooms offer a crisp, juicy texture and a tangy kick that guests will love. Serve them alongside crusty bread or breadsticks for a classic Italian-inspired bite that is both elegant and effortless.

Ingredients

Directions

  1. Clean the mushrooms and slice them into 1/8-inch thick rounds.
  2. Place the sliced mushrooms and lemon juice in a large glass or plastic bowl.
  3. Whisk in the olive oil, green onions, 1/4 cup chopped parsley, minced garlic, salt, and pepper.
  4. Toss the ingredients gently until the mushrooms are evenly coated in the marinade.

Note

Use a glass or plastic bowl for marinating to avoid any metallic taste that might come from metal bowls reacting with the lemon juice.

For best results, use cremini or button mushrooms. Portobello caps can also be used but should be sliced thinner or cut into strips.

These mushrooms can be stored in the refrigerator for up to 3 days. Stir occasionally while stored to keep the flavors fresh.

Serve with crusty Italian bread, breadsticks, or crackers for dipping.

If you prefer a stronger garlic flavor, let the minced garlic sit in the lemon juice for 10 minutes before tossing with the mushrooms.
