Directions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, beat egg yolks and 1/4 cup of the sugar until pale and thick.
  3. Slowly whisk 1/4 cup of the flour into the yolk mixture until smooth.
  4. In a small saucepan, heat milk over medium heat until it reaches the brink of boiling.
  5. Slowly pour the hot milk into the yolk mixture while whisking constantly.
  6. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens into a custard.
  7. Remove from heat and stir in the lemon zest.
  8. Transfer the custard to a container, cover surface with plastic wrap, and refrigerate until completely cool.
  9. In a large bowl, cream the butter and remaining 3/4 cup sugar on high speed until light and fluffy.
  10. Add whole eggs one at a time, beating well after each addition until fully absorbed.
  11. Mix in sour cream, vanilla extract, nutmeg, baking soda, and salt.
  12. Reduce mixer speed to medium and gradually add the remaining flour, mixing until just combined.
  13. Pour batter into a 1-quart round or rectangular cake pan, filling no more than three-quarters full.
  14. Bake on the middle rack for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  15. Let the cake cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
  16. Once completely cool, slice the cake horizontally into 6 even layers.
  17. Place the first layer on a serving platter and sprinkle generously with dark rum.
  18. Spread a thin layer of the chilled lemon custard over the rum-soaked cake.
  19. Repeat the process with the remaining layers, alternating between rum sprinkling and custard spreading.
  20. Spread the remaining custard over the top and sides of the assembled cake.
  21. Refrigerate the cake for at least 2 hours before serving to allow flavors to set.
