Ingredients

Directions

  1. Cut the peeled eggplant into 1-inch cubes and place them in a colander.
  2. Toss the eggplant with 1 teaspoon of fine sea salt and let stand for 1 hour to draw out bitter juices.
  3. Rinse the eggplant well, drain thoroughly, and pat dry with kitchen towels.
  4. Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
  5. Add the eggplant and cook, stirring often, until lightly browned, about 4 minutes. Add more oil if needed to prevent sticking.
  6. Transfer the browned eggplant to a plate and set aside.
  7. Heat the remaining 2 tablespoons of oil in the same pan over medium heat.
  8. Add the chopped onion, celery, bell pepper, and minced garlic. Cook, stirring often, until softened, about 5 minutes.
  9. Stir in the reserved eggplant, cut potatoes, canned tomatoes with puree, vegetable stock, remaining 1/2 teaspoon salt, and red pepper flakes.
  10. If using dried basil, add it now. Bring the mixture to a simmer.
  11. Reduce heat to low, cover, and simmer, stirring occasionally, until the potatoes are tender, about 45 minutes to 1 hour.
  12. Stir in the chopped black olives and fresh basil (if using). Continue cooking uncovered for 5 minutes to blend the flavors.
  13. Serve the stew hot, warm, or at room temperature.
