Ingredients

Directions

  1. Preheat oven to 425°F (220°C).
  2. Spray a 13x9-inch (3-quart) baking dish with nonstick cooking spray.
  3. Cook lasagna noodles according to package directions until al dente. Drain and set aside to keep warm.
  4. In a large nonstick skillet or Dutch oven, bring sherry (or apple juice) to a boil over medium-high heat.
  5. Add chopped onion and cook for 3 minutes, stirring frequently.
  6. Add mushrooms, zucchini, and bell peppers; cook for 5 minutes, stirring occasionally.
  7. Add spinach, basil, and oregano; cook for 2 minutes until spinach is wilted.
  8. Remove skillet from heat and drain any excess liquid from the vegetable mixture well.
  9. In a medium bowl, combine ricotta cheese, cottage cheese, and Parmesan cheese; mix until smooth and well blended.
  10. Place 3 cooked lasagna noodles in the bottom of the prepared baking dish.
  11. Spread 1/3 of the cheese mixture over the noodles, then top with 1/3 of the vegetable mixture.
  12. Repeat the layering two more times with noodles, cheese mixture, and vegetables.
  13. Top with the remaining 3 lasagna noodles, spread tomato sauce evenly, and sprinkle with mozzarella cheese.
  14. Cover dish tightly with foil (spray underside of foil with cooking spray to prevent sticking).
  15. Bake for 25-30 minutes, or until the edges are bubbly.
  16. Remove foil and bake for an additional 5 minutes, or until the top is light golden brown.
  17. Let stand for 5 minutes before slicing and serving.
