Description

This elegant no-bake dessert combines the intense flavor of semisweet chocolate with the lightness of whipped egg whites. The mousse is encased in a layer of finely ground walnuts, creating a beautiful textural contrast between the crunchy exterior and the silky interior. It is a sophisticated yet approachable treat, perfect for dinner parties or special celebrations. The use of a food processor makes preparation quick and efficient, while the chilling time allows the flavors to meld and the structure to set firmly.

Ingredients

Directions

  1. Heat the egg whites until warm to the touch (about 110°F/43°C) to help them whip more easily.
  2. Butter the sides and bottom of a 1-quart glass loaf pan. Line the bottom with parchment paper and butter the paper.
  3. In a food processor, grate or finely chop 1 cup of the walnuts.
  4. Press the chopped walnuts firmly over the bottom and sides of the prepared loaf pan to form a crust. Set aside.
  5. Place the warm egg whites in a clean, dry food processor work bowl.
  6. Process for 8 seconds, then pour in the combined vinegar and water while the machine is running.
  7. Process for 1 minute and 45 seconds, or until the egg whites are whipped stiff and hold their shape.
  8. Gently transfer the whipped egg whites to a mixing bowl and cover.
  9. Do not wash the work bowl. Put the semisweet chocolate, cocoa powder, sugar, and salt into the work bowl.
  10. Turn the machine on and off 4 times to chop the chocolate coarsely, then process for 1 minute until finely chopped.
  11. With the machine running, pour the hot melted butter through the feed tube and process for 1 minute until the chocolate is completely melted, stopping once to scrape down the sides of the bowl.
  12. Add the egg yolks and process for 10 seconds until combined.
  13. Spoon the whipped egg whites onto the chocolate mixture in a ring around the edge of the bowl.
  14. Turn the machine on and off twice, then run a spatula around the sides of the bowl to loosen the mixture.
  15. Turn the machine on and off 3 more times until the ingredients are just mixed. Some streaks of white may be visible; do not overprocess.
  16. Transfer the mousse mixture into the walnut-lined prepared pan. Smooth the top.
  17. Cover with plastic wrap and refrigerate for at least 3 hours, or until well chilled and set.
  18. To serve, carefully separate the mousse from the pan using a thin knife or flexible spatula.
  19. Invert onto a serving platter and gently remove the pan.
  20. Press the remaining walnuts into any bare spots on the loaf.
  21. Let the loaf sit at room temperature for 30 minutes before slicing and serving.
