Preheat oven to 350 deg. Spray loaf pan with Pam or other veg. spray. In one small bowl; beat together eggs, veg. oil and vanilla. Mix together all dry ingredients in a large bowl. Add liquid ingredients to dry and mix well. Fold in chopped apples, walnuts, and raisins. Spoon into loaf pan until half full. Bake in preheated oven for 50-60 mins. Check center with toothpick to see if done. Remove and cool on wire rack
