  2. Cut the peeled potatoes into 1/4-inch thick slices or strips.
  3. Place the cut potatoes in a bowl of cold water to prevent discoloration while you prepare the other ingredients.

  5. In a 10-12 inch skillet, melt 2.5 tablespoons of butter with 2 tablespoons of vegetable oil over medium heat.
