Description

This classic Southern comfort dish features tenderized round steak dredged in seasoned flour and pan-fried until beautifully golden. The star of the meal is the rich, creamy white gravy made from the pan drippings, milk, and flour, packed with savory flavor. Perfect for a hearty weeknight dinner or a cozy weekend meal, this dish delivers satisfying crunch and melt-in-your-mouth tenderness. Simple ingredients come together to create a nostalgic, home-style experience that the whole family will love.

Ingredients

Directions

  1. Pound the round steak with a mallet until it is about 1/4 inch thick, trimming off any excess fat or ligament.
  2. In a shallow dish, whisk together the milk and egg until well combined.
  3. In a separate shallow dish, mix the flour, garlic powder, salt, and pepper.
  4. Heat 1/4 inch of oil in a heavy frying pan over medium-high heat.
  5. Dip the steak into the milk-egg mixture, ensuring it is fully coated.
  6. Dredge the steak in the seasoned flour mixture, pressing firmly to adhere the coating.
  7. Repeat the dip and dredge process for a thicker, crispier crust.
  8. Place the breaded steak in the hot oil and cook for 9-12 minutes, flipping once, until golden brown and cooked through.
  9. Remove the steak from the pan and drain on paper towels.
  10. Pour off all but 4 tablespoons of the cooking oil from the pan.
  11. Reduce heat to medium and slowly stir in 1/4 cup of the remaining flour, cooking for 1-2 minutes to form a roux.
  12. Slowly pour in 1 cup of milk and 1 cup of water, stirring constantly with a large spatula to incorporate the roux.
  13. Scrape up any browned bits from the bottom of the pan, stirring them into the gravy.
  14. Season the gravy with additional salt and pepper to taste.
  15. Bring the gravy to a boil, then reduce heat and simmer for 5 minutes, stirring frequently, until thickened.
  16. Serve the fried steak immediately, smothered in the hot white gravy.

Note

Serve with mashed potatoes, large yeast rolls, or biscuits to soak up the extra gravy.

For extra tender steak, ensure you pound it thoroughly before breading.

If the gravy becomes too thick, add a splash more milk or water. If too thin, simmer longer or add a cornstarch slurry.

Leftover gravy can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a little milk if needed.
