Jess Poling’s Chili
Description
This classic American-style chili is a crowd-pleaser that delivers deep, rich flavors developed over a long, slow simmer. The base features coarsely ground sirloin beef, which provides a robust texture and savory depth, complemented by a holy trinity of finely chopped onions, bell peppers, and celery. Garlic, oregano, and a generous amount of chili powder create a warm, aromatic spice profile that is both comforting and satisfying. The addition of stewed tomatoes and tomato paste brings a bright acidity and thickness to the sauce. Whether you prefer it with or without beans, this recipe is perfect for feeding a large group at a potluck, game day party, or family gathering. The long cooking time ensures the meat becomes tender and the flavors meld beautifully, resulting in a dish that tastes even better the next day.Directions
-
Heat oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
-
Add the chopped onions, bell peppers, and celery to the pot.
-
Sauté the vegetables until they become soft and transparent, about 5-7 minutes.
-
Add the coarsely ground sirloin beef to the pot.
-
Brown the beef thoroughly, breaking it up with a spoon and stirring often until no pink remains.
-
Drain off any excess grease from the pot.
-
Stir in the stewed tomatoes, tomato sauce, and tomato paste.
-
Add two cups of water to the mixture and stir well to combine.
-
Sprinkle in the chili powder, oregano, garlic, salt, garlic salt, and black pepper.
-
Stir in the green chili salsa and hot green chili.
-
If using beans, rinse and drain them, then add them to the pot now.
-
Bring the chili to a gentle boil, then reduce heat to low.
-
Cover and simmer on low heat for 5 to 6 hours, stirring occasionally.
-
If the chili begins to stick to the bottom or becomes too thick, add a little more water.
-
Taste and adjust seasoning with additional salt or pepper if needed before serving.
