Ingredients

Directions

  1. Dissolve the yeast in the warm water in a large bowl.
  2. Mix in the honey and 1 cup of the buttermilk.
  3. Stir in 3 cups of flour until a soft dough forms.
  4. Cover the bowl with plastic wrap and let it rest in a warm place for 15-20 minutes until it swells and bubbles.
  5. Dissolve the salt in the remaining 1 cup of buttermilk and mix in the olive oil.
  6. Add the salted buttermilk mixture and all but 1/2 cup of the remaining flour to the sponge.
  7. Mix until the dough becomes hard to stir, then turn it out onto a floured surface.
  8. Knead the dough, adding more flour as needed, until it is smooth and resilient, about 8-10 minutes.
  9. Lightly oil a clean bowl, return the dough to it, and turn to coat with oil.
  10. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
  11. Turn the dough out onto a counter, punch it down to release air, and divide into two equal pieces.
  12. Shape each piece into a loaf and place in greased 8-inch bread pans.
  13. Cover lightly with plastic wrap and let rise again for about 45 minutes, or until the dough domes above the pan rims.
  14. Preheat the oven to 425 F (220 C).
  15. Bake the loaves for 10 minutes, then reduce the heat to 350 F (175 C).
  16. Continue baking for 30 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
  17. Remove from pans and cool completely on wire racks.
