This traditional American-style yellow split pea soup is the definition of comfort food. Directions

  1. Rinse the split peas and place them in a large pot or Dutch oven.
  2. Add the pork hocks or ham bone, onion, carrot, celery, garlic, bay leaf, crushed chile pepper, and thyme to the pot.
  3. Cover with water by about 2 inches and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2 1/2 hours until the peas are tender and beginning to break down.
  5. Remove the pork hocks or ham bone from the pot and set aside.
  6. Once cool enough to handle, cut the meat off the bone, discarding the bone and any excess fat or gristle.
  7. Chop the meat into bite-sized pieces and return it to the pot.
  8. Scoop out about 1/2 cup of the pea mixture into a blender or bowl and puree until smooth, then stir it back into the soup to thicken.
  9. Alternatively, if using flour, mix 2 tablespoons of flour with a small amount of cold water to create a slurry and stir it into the simmering soup.
  10. Simmer for another 15-20 minutes until the soup reaches your desired thickness.
  11. Season with salt, pepper, and hot sauce to taste.
  12. Serve hot in bowls, garnished with fresh herbs if desired.
