Ingredients

Directions

  1. In a large bowl or blender, combine the lemon, orange, and grapefruit juices.
  2. Add the Worcestershire sauce, teriyaki sauce, mustard, ketchup, cherry juice, and dill pickle juice to the citrus mixture.
  3. Stir in the tarragon, thyme, basil, sage, coriander, mace, fennel seeds, rosemary, oregano, cumin, and chervil.
  4. Whisk or blend the mixture until fully combined and slightly foamy.
  5. Taste the marinade. If it is too tart, stir in honey gradually until it reaches a balanced, slightly tart flavor.
  6. Place your cut meat in a shallow marinade pan or resealable plastic bag.
  7. Pour the marinade over the meat, ensuring all pieces are well coated.
  8. Let the meat stand at room temperature for 1 hour to begin the tenderizing process.
  9. Cover and refrigerate the meat overnight to allow the flavors to penetrate deeply.
  10. When ready to cook, preheat your broiler or grill.
  11. Broil the meat in the marinade juices, or thread onto skewers for shish kebabs, cooking until no longer pink inside.
  12. During the last few minutes of broiling, drizzle a small amount of honey over the meat to help caramelize the surface.
