Description

This traditional Finnish holiday rye bread, known as Joululimppa, is a dense, moist loaf with a deep mahogany color and rich flavor. The combination of rye flour, molasses, buttermilk, and warming spices like fennel and caraway creates a complex taste profile that is both comforting and festive. The addition of orange rind provides a subtle citrus brightness that cuts through the richness. This bread has a soft, slightly sticky crumb and holds its shape well, making it ideal for slicing. It is perfect for holiday tables, pairing beautifully with butter, cheese, or cured meats. While it can be enjoyed fresh from the oven, it actually improves in flavor after a day or two, allowing the spices to meld together. A true winter staple.

Directions

  1. In a large bowl, combine the buttermilk, 1/2 cup molasses, butter, salt, fennel seeds, and caraway seeds. Heat gently until the butter is melted.
  2. Set the mixture aside to cool to lukewarm temperature.
  3. In a small bowl, dissolve the yeast in the warm water. Let it stand for 5 minutes until it becomes frothy and bubbles.
  4. Add the activated yeast mixture and the grated orange rind to the cooled buttermilk mixture.
  5. Stir in the rye flakes (or wheat germ) and the rye flour. Beat well until the batter is smooth.
  6. Gradually add the white or whole wheat flour, stirring in about 1 cup at a time. Continue adding flour until the dough becomes stiff and will not readily absorb more. The dough will be rough and sticky.
  7. Turn the dough out onto a lightly floured work surface.
  8. Cover the dough with a damp cloth and let it rest for 15 minutes to allow the gluten to relax.
  9. Gently knead the dough for 5 to 10 minutes until it becomes smoother and more elastic. Do not over-knead.
  10. Form the dough into a ball and place it in a large buttered bowl. Turn the dough to coat all sides with butter.
  11. Cover the bowl and let the dough rise in a warm spot until doubled in size, about 1 hour.
  12. Punch down the dough and gently knead it for one minute to release air bubbles.
  13. Divide the dough into three equal portions and form each into a round loaf.
  14. Place the loaves in lightly buttered 9-inch cake pans or on buttered baking sheets.
  15. Cover the loaves and let them rise again until almost doubled in size, about 45 minutes to 1 hour.
  16. Preheat the oven to 375°F (190°C).
  17. In a small bowl, combine the 2 tablespoons of water and 1 tablespoon of molasses for the glaze.
  18. Brush the tops of the loaves with half of the glaze mixture.
  19. Lightly pierce the loaves all over with a fork to prevent excessive rising and cracking.
  20. Bake for 35 to 45 minutes, or until the bread sounds hollow when tapped on the bottom.
  21. While the bread is still hot in the pan, brush the tops with the remaining glaze.
  22. Remove the loaves from the pans and cool completely on wire racks.
