Ingredients
2lb round steak, extra lean, cubed (or flank steak)
2lb coarse-ground beef, extra lean
1lb pork shoulder, extra lean, chili grind or cubed
1lb linguica or andouille sausage, chopped fine
3whole purple onions, large, chopped small
3whole Walla Walla sweet onions (or other sweet onion)
6cloves garlic, finely minced
2cup green chiles, chopped (Ortega or other good brand)
2whole green bell peppers, chopped small
2whole red bell peppers, chopped small
2ribs celery, minced
1/4cup parsley, minced
3tablespoon vegetable oil, divided
8tablespoon chili powder (Gebhardt or other good brand)
2tablespoon cumin, ground
2tablespoon Spanish sweet paprika
2tablespoon oregano, dried (preferably the Greek variety)
4whole dried red peppers, crushed (or 2 tablespoon crushed)
2teaspoon black pepper, freshly ground
1teaspoon MSG (Accent)
2teaspoon salt
1teaspoon coriander, crushed or ground
2tablespoon Maggi seasoning
1/4cup Tiger Sauce
16oz beef broth
2cup tomato sauce (15 oz cans)
1cup tomato paste (12 oz)
1cup Italian plum tomatoes, whole, diced
2tablespoon masa harina (or flour) (optional) -- for thickening
1lb black beans (optional), soaked overnight
1bottle microbrew beer (optional) -- to thin, as needed
Louisiana hot sauce Louisiana hot sauce (optional) -- to taste, as needed
2whole Walla Walla sweet onions, diced, for garnish
1cup Monterey Jack cheese, shredded, for garnish
1tablespoon parsley, for garnish

Wash the beans carefully and soak them in enough salted water overnight to cover them by 2 inches. Bring to a boil and simmer the next day until tender (usually 2 to 3 hours).

Meanwhile, heat 2 tablespoons of the oil in a large, heavy skillet. Add the garlic, onions, bell peppers, and celery. Cook until the onions are clear. Remove and reserve.
Place the reserved vegetables and meats in a large chili pot along with the sausage.

Add all remaining ingredients (except the beer, masa harina, or beans), a little at a time, stirring and mixing thoroughly between additions.

Carefully bring the temperature up to a simmer. Cook covered on very low heat approximately 5 hours.

Adjust the consistency after 3 hours. If too thin, uncover and reduce by turning the heat (carefully) up slightly. If it is still not the desired consistency, add masa harina (or flour) to thicken, or beer to thin, as needed.

Taste and adjust the spices carefully (the flavor will develop as the chili cooks). It should be hot enough to be memorable, but not so hot it takes the skin off the roof of your mouth. It is better to sneak up on hot. If it cries out to be hotter, add just enough Louisiana hot sauce.

Finally, and only if you absolutely must, add the cooked beans. A chili purist would jettison them without a second thought; if you want to serve the chili beanless, serve the beans on the side and let people indulge their own leguminous perversions.

Serve topped with the diced sweet onion, shredded Monterey Jack cheese, and a pinch of parsley.
