This rustic “kinda ratatouille” is a flexible, home-style celebration of summer produce. By sautéing onions and garlic until fragrant, then braising them with chunks of eggplant, zucchini, and bell peppers, you create a dish that is both hearty and light. The tomatoes release their juices to create a natural, savory sauce that coats the vegetables. ItâÂÂs perfect for using up garden leftovers or market finds. Serve it warm as a side dish with grilled poultry, or let it cool to room temperature for a vibrant, fresh salad. ItâÂÂs vegan, simple, and deeply satisfying.
