Description

This classic preparation transforms simple trout into an elegant main course with minimal effort. The fish is gently seasoned, dusted in flour, and pan-fried until the skin achieves a delicate, shattering crispness. Streaky bacon, rendered until crisp, and toasted coarse oatmeal provide a wonderful smoky crunch that contrasts beautifully with the tender, flaky flesh. The dish is finished with a luxurious sauce made from browned butter, fresh lemon juice, and a hint of pepper, adding a rich, nutty depth that ties all the elements together. Perfect for a special weeknight dinner or a light weekend lunch, it showcases fresh seafood without heavy breading or complicated techniques. Serve immediately to enjoy the contrast of textures and the bright, savory flavors.

Ingredients

Directions

  1. Pat the cleaned trout dry with paper towels. Gently rub the skins with freshly ground black pepper, then dust lightly with flour and salt on both sides.
  2. Warm a large frying pan over medium heat. Add the coarse oatmeal and toast or fry gently until golden and fragrant. Remove the oatmeal from the pan and set aside.
  3. Cut the streaky bacon into small snippets. Add the bacon to the same pan and fry gently until the fat renders out. Increase the heat slightly to crisp the bacon pieces. Remove the bacon from the pan and keep warm.
  4. Dice the butter. Add 1.5 ounces of the diced butter to the pan with the bacon fat. When the foam subsides, carefully add the trout fillets to the pan.
  5. Press the fish down lightly with a spatula to ensure they lie flat and make full contact with the pan base. Cook for 4-5 minutes without moving them, allowing the skin to become crisp and golden brown.
  6. Carefully turn the trout and fry the second side for another 3-4 minutes until cooked through and golden. Transfer the fish to warmed plates.
  7. Scatter the reserved crispy bacon and toasted oatmeal over the cooked trout. Keep the plates warm.
  8. Wipe out the frying pan with kitchen paper. Melt the remaining 0.5 ounce of butter in the pan over medium heat. Cook until the butter turns a rich golden brown and smells nutty.
  9. Quickly add 1 teaspoon of fresh lemon juice, a pinch of salt, and pepper to the browned butter. Swirl to combine, then immediately pour the sauce over the trout. Serve at once with wedges of lemon.

Note

Ensure the trout are very dry before seasoning to help the skin crisp up properly during frying.

Do not overcrowd the pan when frying the fish; this ensures even cooking and prevents steaming.

Watch the brown butter closely; it can burn quickly once it turns golden. Remove from heat immediately after adding lemon juice.

For a richer flavor, you can use clarified butter for frying as it has a higher smoke point and less milk solids to burn.

This dish is best served immediately while the skin is still crisp and the sauce is warm.
