Description

This Kentucky Bourbon Cake is a decadent, old-fashioned dessert that marries the warmth of bourbon with the chewiness of raisins and crunch of pecans. The batter is dense yet tender, achieving a moist crumb thanks to the soaked fruit and a final bourbon glaze. The citrus zest and juice provide a necessary brightness to cut through the sweetness, creating a complex flavor profile that improves with age. It is an excellent choice for holiday gatherings, special celebrations, or as a sophisticated accompaniment to coffee and tea. While it requires patience for soaking and baking, the result is a luxurious treat that feels both comforting and celebratory. Store it well to allow the flavors to meld and the texture to soften further.

Ingredients

Directions

  1. Place raisins in a bowl and cover with 1 cup of bourbon. Let soak for at least 1 hour, or up to 12 hours for maximum flavor.
  2. Drain the raisins, reserving both the fruit and the soaking liquid.
  3. Preheat oven to 350F (175C).
  4. Generously butter and flour a 10-inch Bundt cake pan or tube pan.
  5. In a large bowl, beat together the softened butter and sugar until light and fluffy, about 15 minutes.
  6. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  7. In a separate bowl, sift together 3 3/4 cups of the flour, baking powder, baking soda, and salt.
  8. Combine the reserved bourbon soaking liquid with the lemon zest and lemon juice in a small bowl.
  9. Add the dry ingredients to the butter mixture alternately with the bourbon-liquid mixture, beginning and ending with the dry ingredients. Mix until just combined.
  10. Toss the drained raisins and chopped pecans with the remaining 1/4 cup of flour to coat them lightly.
  11. Gently fold the flour-coated raisins and pecans into the batter.
  12. Pour the batter into the prepared pan and bake for about 1 1/2 hours, or until a tester inserted into the center comes out clean.
  13. Cool the cake in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  14. While the cake is still warm, brush the remaining 1/2 cup of bourbon over the entire surface of the cake.
