Ingredients

Directions

  1. Heat oven to 350 degrees F (177ðC).
  2. Generously grease and flour two 9-inch round (1-1/2 inch deep) cake pans.
  3. Drain peaches, reserving the syrup.
  4. Add enough water to the reserved syrup to measure 1-1/4 cups liquid.
  5. Prepare cake mix according to package directions, substituting the peach syrup mixture for the water.
  6. Divide the batter as evenly as possible between the two prepared pans.
  7. Bake for 24 minutes or until a toothpick inserted in center comes out clean.
  8. Place pans on wire racks and cool cakes in pans for 10 minutes.
  9. Invert the pans onto the wire racks and cool cake layers completely.
  10. Meanwhile, cut the peach slices crosswise into 3/8-inch pieces.
  11. Dry the peach pieces well on paper towels.
  12. Mix the non-dairy whipped topping thoroughly with the peach yogurt.
  13. Fold the dried peach pieces into the whipped topping mixture.
  14. Place one cake layer, top side down, on a serving plate.
  15. Cover with about half of the whipped topping mixture.
  16. Top with the other cake layer, top side up.
  17. Spoon the remaining topping mixture over the top of the cake.
  18. Refrigerate at least 2 hours or until completely chilled before serving.
