Description

This robust King Cobra Chili delivers a serious kick with a blend of coarse-ground beef round and chuck, simmered in a rich base of tomato sauce and beer. The heat comes from a generous amount of ground red hot chili and cayenne, balanced by earthy cumin, paprika, and fresh garlic. Unlike traditional chilis, this recipe finishes with melted Monterey Jack cheese stirred directly into the pot, creating a creamy, indulgent texture that coats every spoonful. It is a hearty, protein-packed meal perfect for cold evenings or game day gatherings.

Directions

  1. Heat the vegetable oil in a heavy 3-quart or larger pot over medium-high heat.
  2. Add the coarse grind beef round and beef chuck to the hot pot.
  3. Break up any lumps of meat with a fork and cook, stirring occasionally, until the meat is evenly browned.
  4. Add the tomato sauce, beer, ground red hot chili, finely chopped garlic, finely chopped onion, oregano, paprika, 1 teaspoon of the ground cumin, and salt.
  5. Stir well to combine all ingredients.
  6. Bring the mixture to a boil, then reduce the heat to low.
  7. Simmer, uncovered, for 1 hour, stirring occasionally.
  8. Taste the chili and adjust seasonings as needed, adding cayenne pepper if you desire more heat.
  9. Continue to simmer, uncovered, for another 1 hour.
  10. Stir in the grated Monterey Jack cheese and the remaining 1/2 teaspoon of ground cumin.
  11. Simmer for an additional 30 minutes, stirring often to prevent the cheese from burning or sticking to the bottom.
