Ingredients

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place chicken breasts in a saucepan and cover with 1 cup of water. Bring to a boil, then reduce heat and simmer for 10 minutes or until cooked through.
  3. Remove chicken from water and let cool slightly. Reserve the broth.
  4. Once cool enough to handle, shred the chicken into bite-sized pieces using two forks.
  5. Dip half of the quartered tortillas briefly into the reserved chicken broth to soften them.
  6. Arrange the softened tortilla pieces in the bottom of a 13x9-inch baking dish to create an even layer.
  7. Pour 1/4 cup of the reserved chicken broth over the tortilla layer.
  8. Layer half of the shredded chicken, half of the diced onion, and half of the diced bell pepper over the tortillas.
  9. Repeat the layers with the remaining tortillas, broth, chicken, onion, and bell pepper.
  10. Sprinkle the top layer evenly with grated Velveeta Light cheese, garlic powder, and chili powder.
  11. In a medium bowl, combine the Cream of Chicken soup and Cream of Mushroom soup.
  12. Pour the soup mixture evenly over the entire casserole.
  13. Top with the Rotel tomatoes, including the juices.
  14. Bake uncovered for 45 minutes, or until the casserole is bubbly and heated through.

Note

Storage: Cover leftovers tightly and refrigerate for up to 3 days. Reheat in the microwave or oven until hot.

Substitutions: You can substitute regular cream soups for the Healthy Request versions for a richer flavor, though this will increase calories and fat. Flour tortillas can be used instead of corn tortillas for a softer texture.

Variations: Add 1/2 cup of sliced black olives or jalapenos for extra flavor and heat. For added protein, consider mixing in some cooked black beans.

Tip: If the casserole seems too dry before baking, add a splash more chicken broth. If you prefer a crispier top, broil for the last 2-3 minutes of baking, watching closely to prevent burning.
