Ingredients

Directions

  1. Cut the chicken (approx. 2-1/2 lbs total) into serving pieces.
  2. Arrange chicken in a bowl and rub all over with the juice of one lemon.
  3. Let the chicken stand for 10-15 minutes while you prepare the cooking fat.
  4. Heat the mixed butter and oil in a heavy braising pot over medium heat.
  5. Add chicken pieces to the pot and sauté until light chestnut brown on all sides, using tongs to turn gently.
  6. Pour the dry white wine over the chicken and shake the pot to deglaze.
  7. Mix the tomato paste with water and stir it into the pot along with peeled, chopped tomatoes.
  8. Add the cinnamon stick and whole cloves to the pot.
  9. Cover the pot and simmer over low heat for 1-1/2 hours, or until chicken is tender and sauce is thick.
  10. Alternatively, transfer the covered pot to a 325°F (160°C) oven for 1-1/2 hours.
  11. Season with salt and freshly ground pepper to taste before serving.
