Preheat the oven to 350 degrees F (175 degrees C).

In a skillet, heat 3 tablespoons of butter or margarine over medium heat. Add the minced shallots or onions and cook until soft and translucent.

Add the ground lamb or beef to the skillet. Cook, mashing with a fork, until the meat is browned and no longer pink.

Pour in the dry white wine and simmer for a few minutes to reduce slightly.

Stir in the chopped parsley, mint or dill, and tomato sauce. Season with salt and pepper to taste.

Reduce heat and simmer the mixture for 20 minutes, stirring occasionally. Remove from heat and allow to cool completely.

Once cooled, stir in the grated cheese, beaten egg, and bread crumbs (if the mixture is too wet) into the meat filling.

Unroll the filo sheets on a flat surface. Cover all sheets with waxed paper and a damp towel to prevent drying out.

Cut the filo sheets into thirds, creating rectangles approximately 3 x 11 inches.

Take one filo rectangle and brush it lightly with melted butter.

Place 1 teaspoon of the meat filling about 1 inch from the bottom edge nearest you.
