Ingredients

Directions

  1. Trim fat from the beef steak and cut the beef into 3/4-inch cubes.
  2. Toss beef, 1 tablespoon oil, cornstarch, salt, and white pepper in a glass or plastic bowl until evenly coated.
  3. Cover and refrigerate the beef for 30 minutes to tenderize.
  4. Cut chilies into thin slices, removing seeds and membrane if you prefer less heat.
  5. Cut green onions diagonally into 1-inch pieces.
  6. Cut red bell pepper into 3/4-inch squares.
  7. Heat a 12-inch skillet or wok over high heat until very hot.
  8. Add 2 tablespoons oil, rotating the skillet to coat the bottom evenly.

  11. Heat the skillet until very hot again.
  12. Add another 2 tablespoons oil, rotating to coat the bottom.

Note

For best results, ensure your wok or skillet is smoking hot before adding the oil to prevent sticking and achieve a good sear on the beef.

If you cannot find brown bean sauce, you can substitute with hoisin sauce or a mixture of soy sauce and oyster sauce for a similar savory depth.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet to maintain texture.

For extra crunch, save a few peanuts to garnish just before serving.
