Lacquered Salmon - Bon Appetit recipe image

This lacquered salmon offers a sophisticated yet approachable weeknight dinner option. The fish is bathed in a deeply flavorful marinade combining soy sauce, rice wine, fresh ginger, garlic, and a hint of heat from hot pepper sauce. As it bakes, the sauce reduces into a sticky, amber-colored glaze that clings to the tender flesh of the salmon. The addition of green onions adds a fresh, grassy note that cuts through the richness. It’s an elegant dish that comes together quickly, making it perfect for entertaining or a special family meal. Serve over steamed rice or alongside crisp vegetables to soak up the delicious juices.

Description

This lacquered salmon offers a sophisticated yet approachable weeknight dinner option. The fish is bathed in a deeply flavorful marinade combining soy sauce, rice wine, fresh ginger, garlic, and a hint of heat from hot pepper sauce. As it bakes, the sauce reduces into a sticky, amber-colored glaze that clings to the tender flesh of the salmon. The addition of green onions adds a fresh, grassy note that cuts through the richness. ItâÂÂs an elegant dish that comes together quickly, making it perfect for entertaining or a special family meal. Serve over steamed rice or alongside crisp vegetables to soak up the delicious juices.

Directions

  1. In a blender or food processor, combine soy sauce, sherry, honey, hot pepper sauce, black pepper, garlic, turmeric, minced ginger, cornstarch, and sesame oil.
  2. Puree the mixture until almost smooth, scraping down the sides as needed.
  3. Preheat the oven to 400°F (204°C).
  4. Lightly oil two medium baking dishes.
  5. Divide the salmon fillets evenly between the prepared dishes.
  6. Add one whole bunch of green onions to each dish, placing them underneath or alongside the fish.
  7. Pour half of the sauce mixture over the fish, dividing it evenly between the two dishes.
  8. Bake until the fish is just cooked through, basting frequently with the remaining sauce.
  9. If the sauce begins to burn or thicken too much, add up to 1/3 cup of water to each dish to loosen it. This should take about 20 minutes.
  10. Arrange the fish and baked green onions on plates.
  11. Garnish with chopped fresh green onions before serving.
